Maybe I need to get into the chest freezer business too...
Had the same problem after a moose hunt. Lowes to the rescue. Chest freezer #4. Funny though, it now seems to stay full all the time. I think freezers are kinda like gun safes.Back on topic, can't wait until the 19th. For those who haven't had them, the king crab legs are unbelievable.
Sure...3 to 1Brown sugar to kosher salt. Mix, cover fish fully. Let sit for 3 or 4 hours or 24 if you want.Rinse, cold water, rinse again. Air dry. 1 hour.Smoke it. Let it cool. Vac pack it, eat it. Imo, the vac packing and resting finishes it off as the oils redistribute.

Can always just "store" a freezer for a guy. Said a month, 2 at most. Been a year. Finally just filled it with deer and elk meat. It's not going anywhere anytime soon now.
