This is what I needed in my life. Like minded people!
Our garden is still in the works so I ordered two cases of cukes. They got me slicing instead of pickling, and were good enough to keep one to sell, so with the one I made some bread and butters. Tried for some spicy but I don’t think the heat came in.
So when the order of pickling came in I got with it, ended up with 33 qts, varied each batch a little and took notes this time so I can remember.  :drool:

I just got some free time to start canning so quick batch of pickles and since the hot water bath was going I picked some blackberries off the property and made some jam.
Next up more pickles and a batch of pickeld beets..

Got some pork steaks out of the freezer from last year and canned it. I canned a few pints about 6 months ago wondering how pork would do with canning and turned out pretty awesome. Had to make freezer room for cauliflower and broccoli.

The beans are coming on hard so I picked a basketful and pickled them. I've been asked for the recipe so here it is.

Brine:
Two quarts of water
Two quarts of white vinegar (I have a friend that swears by cider vinegar, but I have never tried it)
3/4 cup canning salt
1/2 cup white sugar

In the jar:
Three or four cloves of garlic
One dried red chili pepper
One head of fresh dill or 1 tsp. of dill seed
1/4 tsp. mustard seed
1/2 rounded tsp. pickling spice (I like McCormick brand)
As many prepared beans as you can fit leaving and honest 1" of head space

Prepare beans by washing and cutting off both the stem end and blossom end. Discard any beans that feel soft or hollow as they are likely over ripe and tough.
Bring brine to a rolling boil and pour over contents of the jar leaving one inch of head space.
Wipe the rim of the jar with a damp clean cloth.
Place lid and tighten band.
Hot water bath for six minutes (In the canner and out of the canner in six minutes whether it returns to a boil or not. This is to slightly tenderize the beans not to aid in canning and six to seven minutes seems to be perfect.)

Other things that I do:
I heat the jars in the oven to 200 degrees.
I heat the lids and rings in a pan of water over medium heat.
Just before I place a batch of jars in the canner, I loosen each ring and pop the lid loose to burp the jar and then re-tighten the lid. Beans start off-gassing as soon as you pour the boiling brine in the jar and sometimes will blow the lid during the water bath process if you don't relieve some of the pressure.

The beans will be ready to eat after a couple of weeks and will last a long time if stored properly

I knocked out the last batch of garlic dills today and when I was finished, I rounded up a bunch of orphan jars that didn't really match anything and canned some pickled shallots with jalapeno peppers. It's a good use of the small shallots and my jalapeno plants are bent over with peppers.

Did 8 pints of pickled beans today with Twisp’s recipe. Just used Serrano peppers instead of red chili peppers.
