GOT ANYTHING GOOD FOR A DUCK

so yea i only like duck jerky so far but im willing to try something new that tastes good. i have 4 ducks froze that i shot the other day so if anyone has any ideas let me kno 8)

A friend of mine saves them up all year then after season takes them to the butcher and has duck-a-roni made out of them, pretty good for duck !!  :dunno:

taco's I dice them up and fry them in a little oil the and taco season its pretty good. JB

Fillet the breast and debone the legs. Then beat the hell out of them.  Let them soak in terriaki sauce overnight.  Then grill them. This is the only way i will eat duck that isn't jerky, peperoni, or sausage.

I am bringing a hibachi into my duck blind this weekend for the last day of the hunt. I may try this with some shishkabobs. My plan is bearkabobs,deerkabobs and duckabobs, all with some onion and peppers, yum!

We get pepperoni sticks made.  But here is a good recipe for the grill, take a duck breast and cut a pocket into it (butterfly it), put a perrerchini or jalapeno pepper in the pocket along with a chunk of cream cheese, sprinkle the outside of the breast with Montreal Chicken seasoning and then wrap it with bacon, securing it with a toothpick.  Then grill over medium heat, 3-4 minutes per side.  Its great, especially with a cold beer.

Here is what we were eating in our duckblind this saturday, as we shot our limit of ducks...  :drool:

Deer tenderloin, bear, and duck kabobs, with bacon, onion, bell peppers and mushrooms....

try this!

24 HRS BEFORE! SOAK YOUR BIRDS IN SALT OR VINEGAR WATER!!! A must to rid the fowl "hahaha" taste!


then before your ready to grill!
simmer the following for 10 minutes,
1 cup salad oil, 1/2 cup vinegar, 1/4  soy sauce, 6 cloves garlic, 1 sprig rosemary, 1 TBLS celery seed, n salt n pepper to taste.

Cut your duck n half baste with the mixture above and grill!

i like to take the brests and slice them thin, rap them around a peice of mozz cheeze, stick a tooth pick threw em, bread em and deep fry them. its pretty good, works well for geese too. you can add bacon in the rap if you want.

ya... its called lead weights and a pond... i hate duck... thats why i dont hunt them, they taste like @#$^!!!!!

Breast them out and marinate overnight in olive oil, orange juice, garlic, salt and pepper.  Grill them to medium rare at the most.  Best I've come up with yet.

As some have already said.....beat the crap out of the breasts with a meat tenderizer till they are as thin as possible without breaking apart.  Should end up about twice the size when flattened.  Mix up a double strength batch of beef bullion in a large bowl, then submerge the flattened breasts and refrigerate at least 12 hours or so. 
Then use a chicken fried receipe on the breasts......had alot of folks that could not believe they were eating duck.....tastes just like beef.  Kids grew up on it during the 60's and 70's when I lived in Moses Lake and Ephrata. 
Disclaimer......Does not work well on shovelers....lol.
