The meat starts getting pretty white when they darken up. Smoke it up and give it away. Save the fresh stuff for yourself.
In my experience, however limited that is, you can't generally tell how the meat is until you cut into them. Here are a few we caught a couple weeks back. They all cut up just fine (smoked, but still very good).RWPS I'm also in (from) Wenatchee. I wonder if we've seen each other on the river.
