Deer Brat recipes?

So I played with my first meat processing tonight. My brother and i made about 10# of venison breakfast sausage by compiling a couple of different recipes and it turned out pretty good. Tomorrow we're going to tackle some brats and was curious what people have done and found to be worthwhile? My brother has tried the Hi-Mtn Brat seasoning before and said it was just ok. I looked back in the history a little ways on here and found some recipes but was hoping maybe there would be some fresh thoughts on the subject.

here is a recipe that I have tried its not bad i used 60/40 porkbutt/Elk meat in mine I bought some Jalapeno brat seasoning from butcher-packer a while ago and its my favorite so far there are a lot of brat seasonings out there

Bratwurst (Oktoberfest)
 
 
20 lbs. Pork butts
4 cups milk
6 Tbs. salt
4 tsp. Prague powder
1 Tbs. mace
8 tsp. white pepper
1 Tbs. nutmeg
2  tsp. ginger
4 eggs
4 cups powdered milk
 
Grind meat through a fine plate. Mix spices together and add to meat with the rest of the ingredients. Mix well. Stuff into hog casings. Link and place in simmering water for 20 minutes. Remove and cool under cold running water until cool to touch. Separate the links and package.

here is a recipe that blocks 10# we have used it in our shop for many years it comes from my grandparents in the old country.
On any good sausage you want at least 15% fat..

3oz-Kosher salt
1oz-White pepper
.5oz-Rubbed Sage
.5oz-Soy Protein
1TBL-Mace
1TBL-Granulated Garlic
1TBL-Granulated Onion
1TBL-Ground Nutmeg
1tsp-Ground Ginger
.5tsp- Celery Seed

Add TCM if you are going to smoke.
We also use 2 cups of milk and 1 egg..

Here's mine:

12 lbs pork butt, 8 lbs venison

3/4 tsp garlic powder
1 heaping tsp mace
1 heaping tsp ginger
1 heaping tsp nutmeg
1/2 cup canning salt
1 Tbsp ground marjoram
3 cups water
2 tsp black pepper

Stuff into hog casings and freeze.  If smoking, add appropriate amount of Prague Powder #1 (about 4 tsp).

Thanks for the recipes guys. We did our first batch today with the Hi-Mtn spice brat kit and they turned out pretty good. I want to try something different with the next batch though so I'm printing these off. All in all today we did 10# of brats, 12# breakfast sausage and 10# of burger. It feels really good to be doing this stuff myself instead of paying $100 or more to have it done. Thanks again guys!

But....Now you need a 2hp grinder, Vertical stuffer, Mixer, Slicer, Vacuum sealer and another chest freezer to put all this new stuff in.  Oh and a smoker.  $100 doesn't sound too bad sometimes.  :chuckle:  I'm glad you are doing it yourself!  Any pictures?

Both you guys cracked me up I have all that cool stuff now every time I drive by a propane tank I think about how I can make it into a smoker and every time i go to the landfill I look at all the old style fridge they have and figure how they could be made into a smoker I look on Craigslist for anything i can to make a smoker out of its crazy I have 3 homemade smokers now and one gas smoker i bought from Costco several years ago so I have no need for any more smokers but I always find myself looking for more

Sorry mossy I didn't take any pictures this time, to busy chowing. All the meat turned out great. I am interested in trying a few different recipes, because I'm sure there is something better than the hi-mtn seasoning out there. Thanks again for all the the advice guys, I appreciate it!
