I cut and grind all my own meat, but for speacialty stuff such as chorizo, thuringer and german sausage I use this guy over in Couer D' Alene, ID.  It's worth the drive from Spokane.

Took my 2011 deer to Todd Crabtree in Custer/Whatcom County.  Good guy and has a lot of choices on his products, you can reach him at 360-366-7450.

Owens Meats in Cle Elum is still family owned and have been operating since about 1887. Do a great job and guarantee their work. They offer a nice variety of smoked sausage, jerky etc...
