I took a wild buffalo into Owens Meats and will be picking it up today. I will repost my opinion after I pickup today.
I do my own processing but I buy spices and casings from Olson's meats and smokehouse in Enumclaw, Wa. They are great. All kinds of awards for their products.

I have a freezer full of elk now, including jerky and summer sausage, and will take a whole deer to Farmer Georges for Italian sausage. Will probably gift my second deer this year.
