Glad you caught that  It can make it nasty. I have played with it a lot. More then most. I don't really drink maybe 12 or less times a year. So when I make it I want it to be perfect. This time of year I start getting phone calls when it turns cold :chuckle: so I have to make a batch or 2. One of the few times I will drink. It's just to good not to drink :chuckle:

It will mellow with time. You will see the biggest turn in the first 48hrs. Make sure you shake it well before pouring it.

It amazes me to see all the different spin's on it as well.

You guys that are using apple juice need to try cider next time. It really changes everything and for the better in my mind. The original batch that I made called for apple juice. I like apple cider way better then juice so the next time I made it I used cider and it turned out super!

made some Saturday
But instead of the high octane everclear by the 1L bottle, we used 750 ml of 151 proof everclear + added a 750ml of goldschlagger.  it turned out pretty good.
must say that I am glad the Total Wine & Spirits store opened recently, because the cost of the ingredients was quite a bit more anywhere else.

and Carp we used 1/2 cider and 1/2 apple juice

where can you get everclear? The max I've seen at WA liquor stores is 151 proof.

I got the 190 at the liquor store in Milton.  They had it and the 151.  190 cost $27.  The guy working the counter was worried that I knew not to drink it straight.

So do cinnamon sticks stay in the jars or do you strain them out when "canning?"

Either way.  My way, I do not have them in the jar.  Some folks do put them in.

After reading all of these posts this is something I definitely have to try! Now to see where the nearest place to Centralia is that sells 190 proof everclear.

I literally just pulled a batch off the stove...took a lil taste...turned out great. Now will jug it up and let it "mellow" in the fridge for a while.

Having a few shots right now.  I was doing some mixing and bottling for a buddy this weekend. He just had some serious arm surgery and needed help.  The guy he brews with came by for refills of all the flavors they do.  He gave a fifth to a coworker who thought he could drink it like wine...yea he called off sick the next day, drank it in under an hour :chuckle: :chuckle:

I like it but it lacks the bite of bourbon that warns you it alcoholic, I stress warns :chuckle:

Just a friendly tip.  If you run your booze through a Brita type filter several times (before adding the other ingredients) it will remove impurities, take out the bite and make it really smooth!  You can also make cheap Vodka taste exactly like high $$ stuff by doing the same.   :twocents:
