made some Saturday
But instead of the high octane everclear by the 1L bottle, we used 750 ml of 151 proof everclear + added a 750ml of goldschlagger.  it turned out pretty good.
must say that I am glad the Total Wine & Spirits store opened recently, because the cost of the ingredients was quite a bit more anywhere else.

and Carp we used 1/2 cider and 1/2 apple juice
Hey Neil.....I'll swap you a quart of this for a quart  of the Original recipe........

Happy to oblige.....maybe some evening later this week.

For kicks, I did a calculation of the alcohol in my batch. If my math is correct, I came up with about 12.1% ABV.

Total batch came out to 9 quarts.

I used 1 liter of Everclear (190 proof) and some (probably around 1/4 quart) Spiced Rum (70 proof).

The math:
1.05669 q x .95 = 1.003856. :)
0.25 q x .35 = 0.0875
1.091356 / 9 Qts = .121262

Did I miss anything?

Sure, it might not be very strong, but at 125 lbs it doesn't need to be!  :chuckle:

Made my first bathc last night.  A few of the bottles I used the German Pop-top beer bottles.  It turned out looking real cool.

I will be able to try it when I return back from Washington in a few weeks.   :IBCOOL:

Oh sure, it depends a lot on how you like the taste of it. I have played with it A LOT to get it to what I like. So I will give mine and people may choose to tweak it to make it fit them.

Most the bigger jugs of cider are like 89oz so 1 of them.
3 cinnamon sticks
20 whole cloves
I like to wrap these in a coffee filter because as you boil it. They break apart and you have chunks in it, if you don't wrap them. You can always filter it as well.
1 cup honey "BUY THE GOOD HONEY" Cheap honey works but does not taste the best!
plain white sugar and light brown sugar.
190 proof "grain alcohol"

Bring the cider up to a light boil with the bags of cloves and sticks. Let it boil for about 20 Min's.

Add the honey and stir it in until it is dissolved then let it go for about another 10 Min's.

Now this is one of the taste parts. You will have to taste it and see what you think. Cider is not as sweet as apple juice like a lot of people use to make this stuff. So you will take a 50/50 mix of white and brown sugar. You will add a little bit at a time to get it to the level of sweetness that you desire. Make sure to boil it for about 5 minutes each time you add sugar. Then taste it.

Then Let it cool to room temp or even a little colder. IF YOU ADD BOOZE WHEN IT IS WARM OR HOT. It will cook some off and make it taste funky! DON'T RUSH IT!

The alcohol is by choice as well. 1 cup is what I use and it makes it about what I would call medium. "I AM NOT A DRINKER" so I don't like to taste it much but like to feel it on the back end. I have used as much as 1.5 cups and that makes it stouter.

I don't add anything when I put it in mason jars and in the fridge. You can drink it right away, BUT it will settle into the best taste once 48hrs has gone by and it will mellow out. Make sure you shake it well before drinking it as cider will have more settlement settle in the bottom and you want to mix it up when you drink it.

Tapped into mine this weekend.  Pretty good, but a little to much "cinnamony" for my taste.  I followed the OP's recipe, except added 1/2 cup raw sugar instead of the amount of sugar the recipe called for, and only had a 5th of 191.  I'll probably only use 5-6 cinnamon sticks next time, and add another part of a 5th.  I got 8 quart jars total, and I'm guessing the alcohol content is around a mid-alcohol wine.  Still really tasty.  I grabbed a bottle of whipped cream vodka and added a shot to a glass.  Excellent.  I'm on the lookout for the caramel vodka.  That should make it awesome!
The only difference between a butt kisser and a brown noser is depth perception.

We are doing batch #2 tomorrow.....going with cane sugar, 180 proof....all cider and no juice....but adding some salted caramal flavoring as well. We have a sausage fest get together on the 29th of December...going to bottle this batch up in growlers and break it out for the evening.

Think you're a bit high on that. Based on my math...you have .79 quarts (750 ml) of 151 and 4 quarts of apple cider, giving a total of 4.79 quarts of liquid. 75.5% of the .79 quarts is alcohol, meaning you have 0.60 quarts of alcohol. 0.60 / 4.79 = 12.5% ABV.

Granted, some of the liquid will probably boil out, but this also doesn't take into consideration the sugar volume added. I'd guess it's pretty close.
