smoked tuna recipe

My neighbor just brought over some albacor.  Anyone have a good brine/recipe for smoking?

I have one of the best Salmon recipes ever! It gets rave reviews. I tried it on Alby last fall and it was wierd!
I guess what Im say is dont use a sweeter Salmon brine...

Can it with liquid smoke and a quarterd up Jalepeno and its great!

Good info...I had some smoke salmon once and it was great.  Never did get the recipe though.  Im going to do some internet searches but sometimes those are not too good.

Tuna has been a tough one for me. For some reason it usually turns out mushy, but great flavor. Probably need to try thinner strips, although I've done tuna bellies and they were mushy too, mostly from all the fat  :EAT:

You say great flavor. What did you use? Mine came out good as far as firmness. Just was weird tasting. We did agree it was decent, but wont waste it doing it again.

I just did my normal salmon brine which is just a dry brine of brown sugar salt and some garlic.

On tuna I use less suger and add orange or lemon to my brine.  Never had fresh smoked albacore mushy.  Although we bleed them immediately and trim all the blood meat off.  We also soke them in a light saltwater bath to draw more of the oil out before they go into the brine.  Not sure if that's the reason we get firmer meat, but I haven't had a mushy one yet  :dunno:

Rad how much do you use?  Or do you just eyeball it?

It's been a while since I ran the boat.  Best I can remember I just splashed it in and said, "Yep, that's about right!"  I'm sure I have the recipe I started from around here somewhere.  I'll try and find and get back.
