Smoked Salmon

A buddy dropped off some of his Sunday catch for me to smoke. Wet brined 48 hrs then smoked @ 200 with pecan pellets till IT of 155. Smells freaking outstanding  ;)
Hey! I'm not a complete idiot I have parts missing. Though sometimes I wonder.

Nice spatula....fish looks pretty darn good as well. I've never smoked with pecan for fish.

Thanks started using pecan for fish about a year or so ago. Useually  it's alder or alder and apple or just plain apple. Pecan go's very well with ribs  :drool:;)

Nice try Pecan sometime, but I like the apple better. Looks like you will have some good eating for a while!
