A buddy dropped off some of his Sunday catch for me to smoke. Wet brined 48 hrs then smoked @ 200 with pecan pellets till IT of 155. Smells freaking outstanding

Nice spatula....fish looks pretty darn good as well. I've never smoked with pecan for fish.

Thanks started using pecan for fish about a year or so ago. Useually it's alder or alder and apple or just plain apple. Pecan go's very well with ribs
