Cooking trout at Camp

I haven't really cooked trout at camp as an adult. Usually bring it home. What are some easy and tasty ways to prepare it? Foil? Pan with oil and some flavored salt?

oil works, I kind of like butter.  roll and season in the pan, let it fry. 
mix up all your spices together in one little shaker--trout blend

Easiest way, make a foil boat, add butter, season, put on fire grate.
If you have Bacon, mushrooms, and onions add them in with the butter. This is one of my families favorite way to cook trout.
If you do not have a gate and have a fry pan, season and fry with butter.
You can also wrap them in foil and place on the coals.
Never forget the Johnnie's Seasoning, it goes with just about everything, especially fish.

I roll them in flour or pancake mix before frying. Salt, pepper, flour, fried in bacon grease or butter. Crispy golden brown on the outside.

Score the skin on both sides, season inside and out with whatever you like, stuff the inside with favorite peppers, onions, whatever, and a large portion of butter.  Tightly wrap/double wrap in tinfoil, through on the coals, let cook for about 10-15 minutes on both sides and then enjoy.  Forget the pan and the grate.  And if you like bacon, place 1/2 slice and each side of trout before you wrap.

dill and rosemary are good, some lemon, even brown sugar if you use butter

Depends on the style of camping and what your packing but....here's a few ways I like

Wrapped in foil with all the possible goodies you have available....butter, onions, garlic, brown sugar, bacon....just load it all in with the fish and wrap it up tight...place it on the coals and use your best judgment on when it's done lol

Smoked....take a some type of pot and put a bunch of shavings in the bottom, then take green small limbs and make a divider of sorts or a grill about half way up the pot...then put your fish covered in your preferred seasoning (brown sugar/garlic) and put the fish on top the green limbs...cover with foil and put over the flames....doesn't take long so keep an eye on it !

Cedar plank.....pretty obvious how to do this....not my favorite style but it works...if you don't have the resources available to do the other methods this isn't too bad...

Hot dog style....skewered on a stick and slow cooked like a hot dog....my least favorite way but zero tools required besides an  knife and a nice green stick....flavor it with hunger

I have really come to enjoy the Mccormicks Cajun Seasoning blend. I personally like to strip the fillets off the back bone. Depending on the size of the trout, leaving the ribs in is probably necessary. If you can strip the fillet off, you can probably strip the skin off too like you would with panfish, and then season the whole thing and do a quick fry in butter. MMMM mmm good.

I carry oil and flour (and salt, pepper, sugar....) everywhere, for these types of situations.  Gut, rinse (not required), pat dry, flour inside & out, fry in oil or butter, turn only once, make sure both sides are crisp.  Do not turn & turn!

Alternatively, the green stick method works, but very liberally rub both the inside cavity and outside with kosher salt (not iodized salt).  The salt will draw the water out of the flesh, and the resulting meat will be somewhat like jerky.  It works, believe me.  Rub off the excess salt if it is too strong for your palate.  Smaller fish are better than large, thick fish.  If you catch a mess of small ones, this is the best method.  Smokey, meaty, savory.  Goes well with either beer or whiskey.

If you want something a little healthier, do the foil boat, no oil or flour, just some lemon and veggies. Throw it straight on the hot coals for about 15-20 (gives you time to prepare a nightcap) and its all cooked. Simple, easy, and will put you right to sleep with a full belly.

Cast iron fry pan over campfire with 1/4" oil.
Shake trout in a bag with 50% corn meal 50% flour and a bunch of lemon pepper if avail otherwise salt and pepper.  Cook golden  brown both sides.    Lay fish on plate, meat should separate from bones.

Thanks again everyone. Its been more dry than in the past few years so Stage I Fire Restrictions abound. I just ordered one of those little propane faux campfire thingies so we're going to plan on cooking over that or the propane stove. Options for real fire are limited. No campfires allowed in primitive sites under Stage I restrictions and we'd rather not stay at the developed campgrounds with all the foul mouthed college kids while our babies are trying to sleep. Then there's the portajohns

Primitive camping is the only way to go

  I do a lot of wilderness backpacking, this method is by far the easiest and best way to cook trout with little more than a tin foil pan and some Montreal steak seasoning, no oil needed, they cook in there own juices just cover with foil and place in the coals

It depends on the trout, for me.  Good flavorful wild trout, especially Brook or Brown, grill until the skin gets crispy.  My favorite way for blando planted trout (95% of what's caught in this state IMO), I like to filet it removing all of the bones (small pieces are fine for this) and then gently saute it in butter with salt and pepper, sometimes lemon pepper.  This is great for breakfast with some fried eggs as well and good for a no fire camp.

You can add an onion and a pat of butter if you have it but you don't need it.

usually foil butter and what ever I might have in camp.lemon onion so on..I did have a nice granite rock in camp one time and I put the rock in the fire and fried the fish on the rock it was great

Thank you all, but fish were safe from me, once again  Its been several years since I've caught a fish, and it sucks that my kids think that fishing is holding some pole with a line going into water while daddy tells them to stop throwing rocks into the water  I've liberally put more than a ton of wild game meat into the freezer since I last caught a fish. Not one ton of live weight, on the hoof--processed, cut, and wrapped meat. I guess you gotta stick with what you know

I don't even like trout, to be honest. I guess I'm just trying to impress my kids. Every fall they've seen me leave for a week and come back with a few coolers full of meat. But I can't take youngins out and do the kind of hunting I do. I just thought fishing would be a tangible experience for them. I guess its rabbit hunting this winter.
