Military bolt action rifles have always sacrificed form to function when it came to bolt handles, but the expectation is that bent and/or corroded ammunition is expected. In sporting applications, where there is not the expectation of battlefield conditions to overcome, aesthetics have been a big part of what makes up a classic bolt action sporting rifle. I guess if a guy has some sort of congenital deformity or injury to their hand/fingers then a bolt handle of that nature may provide some real benefit, or if the owner is incapable of reloading ammunition to pressure levels that do not result in stuck cases it might be of benefit to have an industrial strength bolt handle to grab hold of and pry the action open, but for me I prefer something much more refined on a sporting rifle.
