I cut 95% of my fish with a Victorinox 8" breaking knife. Takes an edge easily, holds it well, has some flex but not a noodle. This is my favorite salmon fillet technique at about 3/4 speed. Sent from my Pixel 2 XL using Tapatalk

Thats interesting. Thanks for posting the video and the comments about a curved knife guys. I have a Cutco but if i was a better fisherman or wanted a new knife Id have to try that Victorinox
Lots of nice looking knives. Surprised to not see any with a spoon to clean out the blood inside the cavity under the "spine".

Ive been running a Knives Of Alaska for about 6 years and its treated me well.
With a sharp flexible filet knife you can go in on the back and cut slab and leave bones in one motion. Twice as quick though not always as pretty.
