Has anyone seen this before?

The roast came from the top round area. Thought it had to do with a potential gland but most glands are between the muscle groups. It was wrapped in cling wrap and then freezer paper so don't think that was an issue.  Like I said, the part I tried didn't taste bad, just never saw anything like it. That is even dealing with round worms and bot fly larva in caribou that I got in AK.

That's what I thought it might be. Was it close to the shot wound? It also looks more cooked. Did you have a thermometer in it during the whole cooking process?

Just to be safe, you should send all  your elk meat to me to be tasted...I mean, tested.

Was the roast brined or cured? Looks a bit like an under cured corned deer I did where the cure didn't reach the middle.

Rock7, I have the same problem with my bag of Potato Chips. Like h2ofowlr says "I'd just eat around it." 
But watch out , "You are what you eat!"
