Nice that is a good size one. I caught another one yesterday and saw one feeding in a cow pasture.

Probably grill it.  The grilled backstrap on the last one was really good.

If the choice is there for elk I'll take elk every time, but nutria is surprisingly tasty! I'd wager as good as beaver. Enough seasoning and hungry enough stomach it all taste good 👍
