Too Hot? Stay out of the Kitchen!

Last week with the outside temperature still rising and the Kitchen holding at 80 Degrees, (no Air Conditioning in our home yet), we had moved outside, using a $24 Hotplate to cook our Dinner's.
However Monday, we celebrated the long awaited cooler weather, by tossing into the smoker, a fully cooked (frozen solid, 87 cents a pound) after Easter Sale Ham.
Our little "A-maze-N Smoker Maze" had it thawed and perfectly smoked in 8 hours. After resting in the Fridge overnight, today we cranked up the oven to 325 Degree's and in 3 hours, the internal temperature had hit 160 Degrees. Perfection!
Snitching pieces of crispy skin impaled with roasted pineapple dripping with a brown sugar/maple syrup and dry mustard glaze, it sure is nice to be baking inside the house again.

For added flavor we pushed pieces of hard as rock "Candied Grapefruit Peel" under the skin along with the whole cloves. Looks like for under $10 Bucks, we will be eating Ham sandwich's for rest of the week.

Everything looks great, except the cloves. Yuk. My Amazin pellet smoker now is my go to device, in both of my smokers.

b0bbyg, Home Depot has them in store or On-line for around $30 Bucks.
The
"A-MAZE-N" Brand
5x8 in. Smoker Maze works the best as the pyramid shaped metal spacers keep the pellets or sawdust chips separated (so they don't burn up too fast).
If you have a problem with the pellets not staying lit, (I was surprised how moist they were inside the sealed bag of pellets) try drying them out.
I pile a handful on a dinner plate for a few seconds at a time in the microwave, but watch them close as the steam coming out of the pellets, soon turns to smoke if you leave them in too long. One Full tray of pellets equals about 8 hours worth of smoke. I like Hickory pellets for Ham, Bacon or Cheddar Cheese Blocks.

I've had the AMAZEN smoker for years now and will never be without one. Works great in my electric smoker. Had issues with the pellets staying lit and found baking them in the oven on the lowest setting for 20 mins or so does the trick

Never heard of that smoker but now I read about them I want one for doing cheese. Don't look on Amazon, oct 18 is soonest shipping date 🤣
