I’ll grind it with 5:1 beaver to smoked bacon ends and pieces and make burgers. Awesome
I use a bit more pork then that but still the same burgers. Back straps are my favorite cut, grilled with salt pepper and Worcestershire makes a fine little meal. If cut clean and no castor spilled it's like lean beef, fed it to many people who thought it was beef tenderloin

I will be leaving for my hunting and trapping trip next Tuesday.
Any one have some extra beaver meat available can pick it up this weekend.  I live in Arlington.

Beaver meat, minus the tail, is excellent table fare. We eat all that we trap lol. It’s like roast beef but greasier
I have eaten a lot of it, but never noticed that it was too greasy, but I do remove most of the fat before cooking a roast. Tastes just like very tender roast beef to me, and similar texture too.

 I will be hooking up with JakeLand tomorrow afternoon to pick up two beavers he has in the freezer.
Thank everyone for the responses.
I should be set for my fisher trapping trip back East.
I might have extra fishers if any one is interesting in one to mount or get tanned for a wall hanger.
We will be setting out over two dozen fisher sets .

They will have a New York State game department tag on them.

Good luck. Sounds like fun. I’m looking forward to our trapping season and hoping I can get a beaver early on for bobcat bait.

I picked up the frozen beavers Friday after work. Let the sit two days to b thaw out and got the processed Sunday afternoon into usable size the vacuum sealed all of it. I lost about half of it dew to hide and guts. Started with about 75 pounds and have close to 40 pounds of fist size pieces of trapping bait.

Plus we have a bunch of fist size packs of scrap deer meat in my brother's freezer back in Upstate New York  for trapping bait.
I gly back to Syracuse New York tomorrow morning at 6am  from Seattle.


I'll take my grandson out squirrel hunting early in the mornings the do trap prep and go set leaning poles up for the opener of fisher trapping on the 25th.
I have one last order to get in for trapping supplies from Hoosier Trapping Supply. I'll call it in tomorrow if I have time between flights in Chicago if I have the time. If not tomorrow I'll call early on Wednesday morning. I watched all of their going on eleven years of trapping videos on YouTube. Hoosier trapper outdoors. And I've watched many of their podcast on YouTube as well.

Then I have watched a whole lot of other trapping videos on trapping as well.
There is a whole lot of different state game laws so you need to be up to date on the state game laws for where ever you are trapping.

Hey Big Jon,
Sign up for our December Workshop.  There might be some beaver carcasses there by the end of the weekend that you might be able to buy from the association.
