What are you cooking?

Instead of, or in addition to, the traditional Thanksgiving turkey dinner.

Today I put an eight pound boneless pork shoulder in a simple ham brine and on Saturday I will start brining whole chickens which we'll smoke together with the pork on the recteq.

A little early for Thanksgiving, today I did tacos in a wok. Leftover rice with taco seasoning in the wok on medium high for 5 minutes then diced elk steak that had been previously ran through a cuber. It was also well seasoned, I pulled it off the heat at medium rare. Corn tortillas in a cast iron skillet that were waiting in the oven on warm. Added sliced olives , cilantro, diced onions and a very healthy dose of cheddar cheese and green hot sauce. The only thing missing was the sour cream. Absolutely nuclear!

Had some pretty good elk chili last week,then the next day was chili dogs .
So you know ,it was awesome,then overkill.
Been eating on elk summer sausage for a month or so.
Wife is gonna make a cheese and cracker plate for Thanksgiving with that.
We try to eat at least one or two meals a week from wild game.
I kinda pause on processing meat for a week or two around Thanksgiving,so I'm not in the kitchen, messing up stuff

My wife took a fresh rabbit, some golden chanterelles, rice, carrots and onions and made a wonderful cream soup.  Man, I could eat that for days! :chuckle: 
Bad News...The fog is getting thicker...

I made a brisket (along with a turkey) last year for my family, who a bunch of em have never had brisket.  It blew their minds!

Heading back out to Montana to try to seal the deal on an elk.  My sister is a chef in Helena and loves to do non-traditional Thanksgivings.  Last time we did a 5 course meal where the dishes came out about an hour apart - I think it was French style and I contributed some elk last time.  This year she wants to do Chinese cuisine, which I don't really know how to do other than stir fry.  Thinking of suggesting short ribs or something like that.  Should be awesome though!  Can't beat hunting for 3-4 days, hanging out with family and eating good food, then heading back out again.  Finally snow in the forecast!

Just tried out me new Instapot with elk stew, it was done in 30 minutes. Veggies perfect, meat tender. Good day for some leftovers.

Turkey day here means prime rib. 10 lb rib roast, loaded mashed taters, 7layer salad and spiced cake for dessert. Gluten free for the wife but it is an amazing dinner. Sliced steak sammys for a few days after. Not to mention potato cakes for breakfast using the mashed taters.

Normally do a prime rib but seems like the stores have very little inventory and we leave for the coast Monday for a week so threw an audible and decided to do short ribs this year. Bummed razor clamming is missing turkey week this year so I’ll throw some frozen ones in for an appetizer for nostalgia.
