I couldnt figure out why I never liked salmon or steelhead. My budy (Fishcrazy) told me about that grey meat so now I scrape it all off, sure tastes better now
that's the stuff with the omega-3 fatty acids in it. good fresh salmon won't taste fishy if you leave it in.
If you fillet the skin off the fillet, you can get the gray meat off, otherwise you will have to do it after the cooking normally. I like to leave the skin on for the BBQ, then remove it with the fork.
