Smoked duck
« on: November 25, 2009, 07:06:23 AM »
Anyone have a recipe for smoked duck?  I’ve got a bunch piling up in the fridge and thought I’d give this a try.  I’ve de-boned the breasts but plan to smoke the legs bone-in, any issues with that approach?

pathfinder101 has a recipe for duck he posted on here once. something like, soak the duck in brine, put cedar plank in the cavity, smoke for so many hours, dont let it get too dry, pull the duck from the smoker, remove cedar plank, throw duck in the trash, eat the plank. best recipe i have heard of yet
