those look great. my favortie way to do oysters is, half the shell. mix some butter and garlic. through the half shell with oyster on the grill and put a dab of the butter/garlic in the shell and let emm boil in the shell.  :drool: damnit now i want some.

X2 good thing i'm going to the coast/ west side next weekend, i'll be buying a few dozen to eat :EAT: Or cook whole until they pop and then dip in butter and garlic :drool:

Big J,

When I can them, I smoke them with full smoke until they are half done or so ~ 45 minutes at 180.  Pack them in sterilized jars, with no added liquid, seal up and pressure can following your canner instructions.  I believe mine is 75 minutes at 11 lbs for half pints.  Those will be the best canned oysters you'll ever taste.
