Custom Landjaeger Processor in Western WA?

I'm looking for recommendations on a custom processor to make me some true landjaeger out of venison.

Landjaeger is different than pepperoni or other snack sticks. It's supposed to be fermented like a salami, and then heavy smoke. Done correctly, it's absolutely delicious, and blows away your typical pep stick.

If you know a processor in western WA that does an awesome job on true landjaeger, please let me know. Thanks in advance...

I just took in some elk to be made into peperoni and landjaegers to Del Fox custom meats in Stanwood.  Havent gotten it back yet so I dont know what the results are but I will be sure to let you know.

Thanks, I look forward to your report. What did they charge to process the landjaeger? The average seems to be 5-6 a pound.

There is a guy on Camano Island that does a really good job on landjaeger. If are interested I will get his info for you.

Made my own this year, turned out good, but the guy in Black Diamond makes them way better...  And would recommend him for sure... I will not make them again as they are a process in own....

the guy on Camano is T&T Meats. I just picked up about 25 lbs of Land Jaeger. I like it so much I had my whole deer made into jaeger, sausage, pepperoni, and jerky. If your in the Burlington area let me know and I will give you a package. I have had him make land jaeger out of duck breast and that was really good also.

Morton meats used to do a great job, not sure if the same people are still running the show there though.

T&T makes the best I have ever tasted!!!  I got my years supply from him in Sept.

Green River Valley Meats, I think this is the name. Off of Hwy 18 in Auburn
Bavarian Meats in the Pike Place Market.

I couldn't care less about what anybody says..............

Not sure what the name is now. Franks Meat closed, someone just reopened it at the end of Oct.  I haven't been down there as of yet but it right out of Black diamond off 169 as your heading to Maple Valley on the left side, right before the pull tab place and the same road as the towing place.  When I called they had a European accent so maybe a relative of Frank or something...
