Dutch oven for the lemon meringue pie

I took my youngest son around town today, while we were walking through the market he saw the lemons and mentioned that it would be a good idea to have a lemon pie.  It's been a while since I put one of those together and he really wanted to use the grater and the knife, so I bought three lemons for the half cup of juice that's needed for the pie.

My mother-in-law is visiting and she had just set a leg of lamb in the oven and a few other things going on, so I figured that it was time to try out the dutch oven for this.  I had a fire going in the back yard and the coals were just about perfect for cooking.  I put together a pie crust and rolled it out.  I set the oven up in the coals with the glass pie plate on the aluminum pan.

Turned out great.  In fact, I wouldn't be too surprised if she's having her third or fourth helping right now.  Kids will be mighty upset if the pie is gone before morning.  I'm going to have to try to put one of these together in the field next year.

dave that sounds awesome,one of my favs,never did it in a dutch oven though,,,,

There were two slices left for the kids, so I split those in half.

Kid's weren't hurting for a shortage of sweets though.  Christmas morning we had grits with a scoop of ice cream and the colored sugar sprinkles on top.  It's the only day of the year I let them have sugar on their cereal.  Little rascals didn't get to sleep until about 1 p.m.

My wife is still recovering from surgery and was feeling awful on Saturday, so we set the big dinner plans aside and I put together something unexpected that turned out pretty good.  Stoked up the fire in the back yard and had the kids put together pieces of some cubed lamb in the middle of a piece of foil with their choice of things to add... kind of like you do at a Mongolian Grill restaurant.  I had a few pieces of cheese, Hawaiian sea salt, quarters of Walla Walla sweets, diced pineapples, apples, chopped almonds, and a little bit of olive oil.  We set those over the fire until they were steaming really good.

We've had a dutch oven picnic at the archery range at one of the work parties some time ago.  Might try it there.
