I use a Kershaw ProGrade 9.5 inch. Works great. Don't think they make it anymore. But you could still probably find it.

Bubba Knife has been a good one.  Filleted about 60 salmon with it over the summer.  Other option is to get a professional grade one.  They use better steel and they hold a better edge.  You get good cuts on the fish.

I’ve had one of these for a long time. Fileted lots of salmon when I had my boat. Now it’s still my go to knive fir all kinds of things including carving big bird during the holidays, and, cutting up the local deer I get. Reasonably priced, holds an edge well, and the sharpener in the sheath actually works  ;)

Been filleting salmon for over 50 years and the knife pictured is way the best for me, fast, much cleaner smooth perfect cuts, etc. 

I learned from watching a guide friend that for me and for him, a long blade that is curved is way better for filleting any fish than skinny straight ones, which I had used for years.  If I replaced this Kershaw pictured, it would be with an even longer curved commercial salmon fisherman knife of the same shape only bigger and longer.  The long blade lies flat against a lot of ribs at once and curved blades just always cut meat better for me. 

I do like usual fish fillet knives for certain cuts when boning out deer and elk etc.

I did the bubba blade and rapala and a few others but while I was working a boat in Alaska this summer it became clear. That long square tip victornox is the beesknees

This is my favorite salmon fillet technique at about 3/4 speed.

I have a Cutco but if i was a better fisherman or wanted a new knife Id have to try that Victorinox
