Pork spare ribs in the smoker
« on: January 06, 2013, 10:51:16 AM »
Well I put some pork spare ribs in the smoker this morning.  See how the turn out.  Not for the game either.  Vikings lost so I won't watch much of any football till the superbowl.

How was the moisture?  Did you foil wrap them at all, or just smoke?  How long?

They were juicy when I cut into them.  I didn't foil them.  Smoked them first 3 hours with cherry chips then last 3.5 hours just heat at 235.  First time doing ribs too.  This is the second time using the smoker.  Next time I will probably foil them the last hour.  I did dry too but I had Famous Dave's sauce to put on it but I didn't wife did.

They were damn good tasting.  Even with this damn cold I could still taste it.

Can't believe nobody mentioned 3-2-1 method.   :yike:
3 hours smoked, 2 wraped in foil,  1 hour no foil @225

Pretty much pork ribs 101

Pretty fool proof. That's usually how I roll. Mustard glaze with rub, then sauce at the end.

If you foil them after smoking for a while they will absolutely fall off of the bone.  I also use the 3-2-1 (never heard it called that) method.

I like this one.  I try many other ways too....I like the smoke but the wife doesn't...little less smoke.  I didn't do the mustard thing I want to try that next time though.
