Has anyone ever had pheasant sticks or peporini made? I have about 35 in the freezer and was thinking about calling a butcher or two.

If you have that much you should trow a dinner party and invite some of your friends especially any that don't hunt. I have several great recipes that are sure to please the palate. My wife's favorite is this... Crank the oven up to 325 bake place pheasant in 9x13 baking dish aprox 2in in deep. pour cream of mushroom soup over the top. Bake for 35-40 min make a mix of white and wild rice. We get our wild rice from Costco.. As the meal is finishing and your guests are there. Take a bottle of red wine(whatever you are drinking)  Pour some into a sauce pan jar of Current jelly(you can substitute other jelly if necessary) and Frenches yellow mustard. Bring to a foaming froth and whip with a whisk until all ingredients are dissolved.  Serve the pheasant over the rice and you can either have small dipping cups for the sauce or a gravy boat to drizzle over the meat. Guaranteed to please.  This recipe can also work on duck.

I respect your right to do what ever you want with your birds, but you do know there are better ways to ingest pheasant than pepperoni right?
you don't see much chicken jerky or pepperoni on the market, besides pet treats... just saying.

Concur on way too good for pepperoni,Make some great appetizers cube breasts into bite sized cubes,marinate in wishbone italian dressing,wrap with bacon and broil for 7 minutes,remove from oven,place a piece of provolone cheese over toothpick and re insert to oven for 1 minute. They are really good And it seems they are the first appetizers completely wiped out at gatherings.

That's all good and dandy if you only have a few, I have around 40 in the freezer from some group hunts and dog training where no one wanted there birds so I am taking 30 to get made into jerky. Sounds like the peporini is more for ducks and geese. But the jerky should be great

what about sausage? I had some pheasant sausage that was stuffed with apple and some type of cheese that was just amazing.

way to many recipes out there other than turning pheasant into something people use scraps for. personally i would eat it up.
when i hunted pheasants & was lucky enough to bring a few home, the wife had a couple ways to fix em that were so good we would eat them that evening or the next day at the latest. a days limit never lasted longer than a meal.
if i had a stock pile such as yours( probably would of never happened) i would be trying every recipe i could find that sounded interesting.
of course to each his own, & if that's what you choose to do with your bounty then enjoy. it will probably be good eats. :tung: :tung:

I'm sure you can make VERY tasty sausage or pepperoni so if you are set on it knock yourself out. I just point out other options because not all wild game lends itself  to such easy/great meals especially for those who may be frightend of any "wild game taste. Since you are obviously a successful pheasant hunter you will be able to replace/supplement what ever you use for the sticks... It will eat great no matter what you do!

I had some extra pheasant last year and mixed it with my duck and goose and had german sausage and hot links made and I must say it was a unique culinary delite to be had  :EAT:  I say go for it if you're tired of traditional pheasant recipe's

A friend of mine brought back a weeks worth of birds from South Dakota and had them mixed with buffalo and made into pep sticks. They were increadable.

Another Idea...
This is by far my favorite skewer recipe for huns, quail, chukar, and phez:
Marinade
1/2 cup of each - lime juice, olive oil, and cilantro (don't skip lime juice...it will break the meat down, keeping it tender)
1/3 cup of each - soy sauce, and honey
4 cloves of garlic
and 2 tablespoons of dijon mustard
You can add 2 tablespoons of sherry, and some dried crushed red pepper flakes...but not necessary.

Mix marinade and separate about 2/3 cup to heat and drizzle when you are done cooking>cut birds into kabob size chunks and marinate for an hour>skewer all birds tight> barbecue or bake until done>drizzle the 2/3 cup of heated marinade you set aside on finished product.

I have doubled the recipe and served 20 skewers at a holiday party and they were gone in a hurry.  Try it-you won't be disappointed!

Got 21 pounds of pheasant roni back yesterday, turned out fantatic and I will be doing this again with my excess birds next season

I marinade my birds in the juice of a few limes, olive oil, a few cloves of crushed garlic and lots of ground cumin. Whisk until well blended and let birds sit in it or an hr or more. Put on a grill and baste birds with the leftover marinade. Great with whole quail and pheasant breasts.
Trader Joe's simmering sauces work well on tuff phesants legs but you need to simmer them a long time

2 weeks ago I made 20# of jalapeno pheasant sticks, it was easy. Buy the seasoning at Spokane spice and mix 60-70% pheasant with pork. Everyone likes them!
A smart dog will bring 2 beverages to save a trip to the fridge!

I grind old birds with venison for tacos.  Man is that delicious :drool:  Also grind with apples and pork sausage for breakfast patties which is also good.  Simple Kitchenaide and the possibilities are endless.  Just the wife and I around here and we eat about 70 pheasant a year.  Plus I make about 15# of pheasant dog treats a year too since we sometimes don't let them get far enough away before we pull the trigger  :o  Tried making pepperoni, but pheasant was just too dry and it took 80% pork or elk to get it right.  Brauts turned out ok, but the breakfast sausage is more versatile.  Plus I can grind as much or as little as I want with very little fore thought.

Man, I would bake a bunch of breasts and slice the meat thin to use in sandwiches before I'd turn it into jerkey or pepperoni.  Way too yummy for that.
