The one I pack the most is my folding 2159 LSSP XX Case. Got it as a gift in the 80's from my folks and have liked it so much that I finally found and have given one to each of my kids and son-in law.
I also use the stag handled knife shown in the photo by itself.
The other knife in the photo of knives was my very first when I was 8 years old. Its says E.C. 82X made in Solingen Germany. (Kind of a cheapy I think) but it has a lot sentimental value.
I also carry the EZE Lap Diamond sharpener along with a scalpel and a pack of blades.

Kershaw Alaskan Blade Trader in my pack, along with my Wyoming Saw. Does everything I need in the field. I also have 3 Bucks, 2 Old Timers, and a couple of Gerbers for extras if needed.

My trusty Buck 110 has cleaned more animals than I can count. I also have made a few for myself that I use as well, here is one I made

I carry a Leatherman on my belt every day, bought it when I was a Private stationed in Panama in 1993 and I can't seem to bring myself to switch it out with the newer, more effective multitools (I own a couple, I just never wear them).
For hunting I carry a Buck Vanguard (no gut hook, black rubber handle). I love that knife. I also carry it when I do field training in the Army, since it has a 4" blade and that falls within the Army's acceptable "personal knife" standard.

For a decade or more now, I've carried two Gerbers. Both are fixed blade Gerber Gators with drop point blades, one has a gut hook, one doesn't. The gut hook version stays in my pack, the other stays on my belt. I also carry an older Leatherman too, an original PST. All are Made in USA. In fact all were made in Portland. While I love these knives and they've performed par excellence for me, Gerber no longer makes this knife in the US, so I no longer recommend it. If you can find an older made in Portland one....
I also really like (and own several of) the Gerber Gator folding lock blade with the drop point blade. In fact when this knife first came out in the early nineties is when I first became acquainted with Gerber knives. Been using them since. Before that I was a Buck man.

Cutco Drop Point Hunter with orange handle and Double D blade. (Lost my green one so went for the blaze orange so I could find it easier.) You can't sharpen it yourself, but for $5 they sharpen it for you. It field dressed and butched about 5 Wisconsin deer and 3 elk without a need for sharpening. Cuts about anything.

Heres a few that I've used.
The white handled butcher knives are my "Go-To" knives, from buthering game to butchering farm animals.
