Fatties. Chubs. My wifee doesn't like the names much, but hey, I didn't name these things!  :chuckle:

1st weekend  I've had time to really start bonding with our new Traeger. I'm not a foodie and I've NEVER heard of these things but they sure looked tasty and I've still got quite a bit of bear sausage from last Fall's blackie. I can't believe the multitude of goodies folks stuff these with! We did two. One with egg/peppers/onions/cheese (breakfast) and one with one of those zippy rice 'sides' plus extra cheese (lunch)

Thaw in fridge.


Flatten out sausage in 1-gallon ziploc bags.


Needs bacon!


Diced peppers & onions


Saute'd and then 3 eggs


and what's better than Bacon? A Bacon Weave!


This part got a bit tricky. Lay out the sausage-in-a-bag. Cut the bag open. Lay the stuffing out and roll it up. Then comes the tricky part. Roll the stuffed sausage on to the bacon weave and roll that up too! A few toothpicks keep it together




Smokin!


I smoked for half an hour and then bumped the Traeger to 250F and waited for 160F internal temp. Took a couple hours total. Then I maxed the temp to 450F for a few minutes to try to crisp the bacon. Kind of successful but very tasty none the less  :IBCOOL:



There goes my diet!  :tung:

Yup! Thinkin I'd better run a couple more this weekend. Make some improvements  :tup:

As reheated: the cheezy rice mix was a bit better 2nd time around. Definitely needs some more kick tho (and I'm not a huge hot-spicy fan) plus I would run that last bacon-crisping step hotter and longer.

Using a better cheese than I did last time would help! Like sharp or pepperjack maybe. Bacon with less fat wouldn't hurt either (good luck finding good bacon at Walmart tho!)

Lastly I would trim the bacon weave wrap so it has less overlap at the ends.    .... or make the stuffie even bigger!  :chuckle:  The bacon buried deep under overlap definitely wont crisp up very well
