AwesomeI use a bit more pork then that but still the same burgers. Back straps are my favorite cut, grilled with salt pepper and Worcestershire makes a fine little meal. If cut clean and no castor spilled it's like lean beef, fed it to many people who thought it was beef tenderloin
Beaver meat, minus the tail, is excellent table fare. We eat all that we trap lol. It’s like roast beef but greasier
