Frozen Razor Clams?

Is it okay to freeze razor clams?  I've got a few bags of them in the freezer and my wife thinks they are not safe to freeze?

I bought frozen razor clams several times in Ilwaco last summer and lived to tell about it

I have eaten frozen razors only a couple hundred times...

If they are bugging her in the freezer, thaw them out and pressure can them for snacks later... Yum! 

We have a smoked razor recipe in the recipe section...

I freeze them in water.  Then vacuum seal them.  Have eaten them up to two years later and still mighty tasty.  Why would she think it is not safe?  Ever see frozen clam strips in the store?  Ever eat clam strips at a fast food restaurant? Yep those are frozen too!  Dang women :rolleyes:  :chuckle: :bash:

Perfectly safe to freeze them.

They freeze better than just about anything.  I've vacuum sealed and pulled them out a solid two years later, and no one knew the difference.

So I'm kind of curious why she doesn't think they would be safe frozen?

I canned up 8 half pint jars using ICEMANS recipe 4 with smoke and 4 without and they didn't last more then a week before they were all used in dips (billythekidrocks smoked clam dip recipe) and chowders and just straight out of the jar. This is definitely the way I am going to preserve them from now on !!! :drool:

Why add the water? keep air off of them??

A few reasons.  When you vacuum seal them before freezing completely they tend to get too soft.  If you wait for them to freeze before sealing it's impossible to get all the air out because of all the odd angles.  So I put them in a rectangle Tupperware container use enough water to cover well, put in the fridge over night and then freeze.  Once frozen I take them out of the Tupperware and vacuum seal.  Seems to get the best life and the best result when thawed. 

The other reason is I absolutely love chowder, but I hate that crappy Snows clam juice in a bottle.  The reason I refrigerate before freezing is to let them milk real well.  You get another good milking as you thaw the ice and clams together.  You will never use Snows ever again after doing it that way.  And, the juice refreezes very well.  So if you want fritters or strips or whatever else that does not require clam juice you just refreeze for more CJ in the next batch of chowder.  Just throw the frozen cube right into the pot with your cooked bacon, leaks, sweet onion, celery, fresh thyme, carrots, taters and flour before adding your heavy cream and clams.

Dangit, now I'm hungry.

its best to freeze them in water and then vaccum pack them, they will stay fresh for along time. we do that with small panfish from lakes as well and they keep really nice  :twocents:
