What do you do with the bufflehead and mergansers?
Nice start so far!
Merganser I make Salsbury Steak out of (see recipe on my Merganser thread). The Buffleheads I fried up last night with onions, garlic and some seasonings. All but one were really mild.
I'm going to try the recipes you posted but still cannot envision a merg being edible.
