My buddies wifes spring bear this year was like that.  It was hot as *censored* and he was worried it had spoiled. I told him no way it spoiled that fast and to just make sausage products out of it.  He got pepperoni and polish sausage made out of it and it tasted great and didn't smell after being processed.

My friends bear this year had a wet dog smell to the meat...sure didn't smell like it was going to taste very good..he tried to offer me some for the help but I told him it's all yours it's your first bear   :chuckle:

Unless really cold, sour can happen quickly if you don't get it off the bone quick enough..in as little as an hour or less..they hold heat like nothing else

Do you always bone out bears in the field? I see some guys take bone in hams, but seems like if anythings going to hold heat next to the bone its the hams. Especially if you've got a few hour pack out before you can get it cooled off.

I did a deer once.  Was filled with green slimey mucousy tumors.   Smelled aweful.

I’ve killed one nasty bear. It smelled to high heaven and when I started to process it as I was skinning it there were little worms in the flesh. Later on when I took the skin out of the bed of my truck it looked like I poured a can of gear oil in the bed of the truck. Super oily.

This was not a processing problem.  This bear was treated no different than any of my other three and they all turned out fine.  This was just a rotten bear.  I have smelled bone sour before......this was not it.  Smelled like decomp.

Bears are what they eat. Probably been feeding on some dead critters..
Love cooking up some berry fed bearchops!
Salmon eaters stink the kitchen to high heaven, if you can stand to cook it😝

Call WDFW and report your problem. They may issue you another bear tag due to loss of your meat. Either way congratulations on getting one.
