Been doing a 3 hr smoke them canning the trout I’ve been keeping lately. I put 1 tbs of olive oil, garlic and fresh jalapeños in ea jar. 15 lbs for 90 min in my pressure cooker.
If you shoot the first one you will never get that true trophy.

Popped one of the pickled green beans I did with Seranno peppers today after two weeks. Nice flavor not being to hot but has enough heat for me. This one had the pepper sliced, some I only cut the ends off, those should be milder. These will probably get hotter over time.

Blanched fifteen more quart bags of green beans today, I think we have around thirty plus bags in the freezer now. Kinda tired of picking and snapping them.🤣

Might do some more pickled beans though for gifts.

Those look like they turned out great  :tup: and they make a really popular gift.
If you can find them, the pint and a half jars fit pickled beans really well. I found some at the co-op in Arlington.

I pickle a fair amount but only eat a few jars a year. Fun to make and even funner to give them out for gifts. I never make jam or jelly but I fully expect my friends to hand it over when they make some  :chuckle: .
