i would like to start canning fish but not sure what i need to get started
I don't think the drier white meat fish woulod can very well, but I have not tried it.
I also can any excess fish. Salmon and Tuna are both outstanding and razor clams are out of this world. The tuna I just do plain but I put a little bit of smoke on the salmon. Clams get Iceman's razor clam recipe. I will even thaw out anything from the freezer more than a year old and can.Never tried canning cod or rockfish. That doesn't last too long in our house.
I am one of those who thinks you should kill every hatchery fish you can get your hands on. So, I end up giving away a lot. It isn't hard to give away fresh fish. I also smoke some, but need to start canning.
