You have to let it sit for weeks before eating. Eating right of the smoker taste like an ash tray. I won't give any any of my evoked cheese until after exactly one month vacuum sealed rest in fridge. I personally will eat it three weeks after. The longer sir the better. The stuff you buy in stores has rested a year.
