Second batch of Duck Sausage!

Last season the wife decided that duck weren't really worth the time since she wasn't a fan of the flavor. That was untill I made a batch of sausage. She *censored*ing loved it! Now I have an open green light to go 'dunting' as she says it.

Next experiment is going to be trying to smoke some. =)

I blend 60/40 duck/pork shoulder. Grind each meat separately.


Then grind them together.


This batch was mild Italian and stuffing the casings isn't so bad.


But twisting the links is still a skill I haven't mastered. Only solution ... kill more ducks!

Do you use your grinder to stuff the casing? Or do you use a sausage stuffer?

I used a calking gun type stuffer. Slow but it gets the job done.

I cheated and use Wholes Foods Mild Italian sausage seasoning. =)

How long did you smoke them for?  And at what temp?  I have a Traeger that might be fun to try.

you got to ease it in slow and steady, you can't just cram it or you'll tear it.
