i can send you a rub recipe. smoke at 250 til it hits 193 dead on, done, eat, and make sure to cut it against the grain

Here is one from a few nights ago, sadly all 12.25 lbs went fast lol, left over brisket and eggs, sammiches, fajitas, you name it! I like it on a sammich with a fat slice of quality mayo, salt & pepper :drool:

oh it happens i meet folks all the time that tell me how smoked meat is just not good blah blah but man they sure love farmed atlantic salmon :o I just smile and nod  :)

So here's my question about cutting brisket. The "flat" end & the "point" end. Is it typical each part is sliced 180 degrees opposite of each other to keep the preferred cross grain cutting.

you know i never payed that much attention i just cut it cross width and it just always works out, except once i had a small one pretty much square, i cut it with the grain was like eating leather
